One of the things I miss most about Istanbul’s food scene is going to a çorba evi (soup house).
These places are dedicated entirely to soup, and although the concept may sound simple, the experience is anything but. A typical çorba evi in the city offers an impressive — perhaps slightly bewildering — list of soups, sometimes more than 20. Havun Çorba Evi is a must for enthusiasts, where you can find a soup for every taste: from yayla çorbası (Turkish yoghurt soup) and mercimek çorbası (lentil soup) to düğün çorbası (wedding soup), kelle paça and many other options.
