Whenever there is a road trip around Istanbul, what excites me more than the destination is the traditional roadside food — especially gözleme (a thin, crispy stuffed flatbread).
This delicious dish is made to order, often by a skilled Turkish grandmother who has perfected the craft. Here’s how gözleme is made: thinly rolled dough is filled with ingredients such as potato, kaşar cheese, minced meat, spinach or feta (or a combination), then folded and sealed. The filled dough is cooked on a hot round griddle (saj), turned several times until golden on both sides, and finally brushed with butter.
