“Dolma” is a Turkish culinary term for all kinds of dishes stuffed with fragrant, flavourful fillings (such as vine leaves).
Here, midye dolma (stuffed mussels) are freshly prepared every day with a mix of fragrant rice and spices and served with a wedge of lemon. To eat one, simply open the shell to reveal the rice mixture in one half. Then use the other half of the shell as a spoon to scoop out the rice, squeeze a few drops of lemon over it, and eat these stuffed mussels on the go, just like the locals.
